Paleo Piña Colada Smoothie

Quarantine has been a blessing and a curse in our household. My husband is working 30 hours per week from home while I have been off work since March 21st, but fortunately still getting paid unlike most. One thing quarantine has done is allowed us to spend more time outside soaking up the sun on beautiful days like today.
One thing we definitely miss though is vacations. We don't take them very often but one of my favorite trips my husband and I took was in May 2017 in Ft. Lauderdale. We spent one rainy day at the spa but every other day the only thing we did was lay out on the beach and drink our weight in Piña Coladas. And let me tell you, I don't know what kind of magical crack they put in these things, but they were the best Piña Coladas we have ever had. This recipe is inspired by my love for those cocktails while adding in essential nutrients from fruits & hidden veggies. This recipe is also vegan depending on what protein powder you use. My preference is the paleo option Ancient Nutrition Bone Broth Protein.

Blend all ingredients in a blender until combined and smooth. If too thick, add water or unsweetened almond milk to dilute:
1 medium banana (fresh or frozen)
1 cup of frozen pineapple
1/4 cup of frozen cauliflower rice
1/4 cup of frozen zucchini
Optional-large handful of fresh spinach for some healthy greens
1/2 cup of full fat canned coconut milk
Optional- unflavored or vanilla protein powder of your choice.
